    Gujiya or Gujia is a sweet half moon shaped dumpling that has a crisp outer shell made from maida and a soft filling made from sweetened milk solids and dry fruits. There are many variations of Gujiya in India and each region has its own filling that goes into giving the Gujiya its unique taste. Gujiya is known as Ghughra in Gujarat, Karanji in Maharashtra and Orissa, Somas in Tamil Nadu, Garijalu in Telangana and Kajjikaya in Andhra Pradesh and Karnataka. These variations of Gujiya have a filling of desiccated coconut and sugar instead of the milk solids. A variation of Gujiya known as Chandrakala is soaked in sugar syrup after its cooked.
