Sandesh is a milk based sweet dish originally from West Bengal in India. Sandesh is made from chenna which is made by curdling the milk and separating the whey from it. Another variant of Sandesh uses mawa or milk solids. The basic Sandesh is the Makha Sandesh that is made by mixing chenna with sugar over a low flame. Sandesh is sometimes rolled into balls and is known as Kanchagolla. It is not uncommon to find exotic variants of Sandesh that are flavoured and pressed into different shapes. Nolen Gurer Sandesh is made using gur or jaggery.
