Pootharekulu is a paper thin sweet from Atreyapuram, a village in East Godavari district in Andhra Pradesh. Pootha refers to coating and Reku refers to sheet in Telugu. This dish is also known as paper sweet as it has the appearance of folded paper. A specific strain of coarse rice, known as Jaya Biyyam, is soaked and ground for a few hours into a batter. To get a paper thin film, a thin cloth is dipped into the batter and spread over a very hot inverted earthen pot; when the cloth is removed, the batter cooks instantly and evenly. The cooked film is removed, covered with ghee and powdered jaggery and rolled. It is interesting to see how the earthen pot is prepared; a hole is drilled into the base and the pot is heated and coated with oil for many days till the surface is very smooth.
