Brinjal or Eggplant, is a popular vegetable that is used to make pickles in the southern part of India. The preparation of this pickle is the same as most others - brinjal is cut into small cubes and marinated in sesame or other vegetable oil with a mixture of spices and salt. In traditional pickles, no preservative is added and the ingredients that go into the making of the pickle act as natural preservative. This pickle can be store for a few months without it losing its taste.
