Badam refers to almonds in Hindi. Almonds are soaked in water for a long time till they are soft and then ground to a paste. A solution of sugar in water is boiled over a low flame till it thickens and it added to the almond paste along with ghee. This mixture is spread thin over a flat dish, cut into diamond shapes and left to cool. Badam Burfi is often decorated with silver foil and is available as a white or yellow variety depending on whether it contains saffron.
